First, a checklist of ingredients.

To make eggnog, you’ll need 6 large eggs, 1 cup of sugar, 2 cups of whole milk, 1 cup of heavy cream, freshly grated nutmeg, and optionally, 1/2 cup of bourbon, rum, or cognac.

Let’s get started!

Separate each of the eggs, placing the yolks in a medium-sized bowl and the egg whites in a larger bowl. Cover up the bowl with the whites and refrigerate them until they’re needed later.

You’ll probably need a good set of mixing bowls.

Grab a whisk.

Whisk together the yolks and the sugar, either using a hand whisk or a mixer. Either way, mix until you’ve got a mixture that is smooth, creamy, and a light lemon-yellow color.

Now, mix in a few more ingredients.

Add in the milk and cream now, whisking until they’re thoroughly combined. And if you’re using liquor, this is also the time to add that!

Time to refrigerate.

Cover the bowl and refrigerate it for an hour. If you’ve made eggnog with liquor, it’ll last longer than non-alcoholic; non-alcoholic eggnog should be consumed within a day.

This next part requires a stand or hand mixer.

Before serving the nog, whisk your egg whites at high speed using a mixer until the whites have stiff peaks.

Add the whites to the eggnog.

Gently fold (or stir) the whites in to the eggnog base; this should give your eggnog a frothy and extra-creamy texture.

Grab a pitcher!

Pour your eggnog into a pitcher. It’s ready for drinking!
